Tortilla Zucchini Wrap

Ingredients required –

  1. To Make Gluten Free Low GI Tortilla Wrap
    1. 1 & 1/2 cup of Sugar Watchers Gluten Free Low GI Atta
    2. Salt to taste
    3. Water as required
  2. Grilled Zucchini
    1. 2 tbsp Olive Oil
    2. 1 tbsp Red Chilli Flakes
    3. 1 tbsp Oregano
    4. 3-4 Zucchini Strips
    5. 1 tbsp basil leaves
  3. Final Tortilla Wrap
    1. 1 Tortilla Hummus spread (https://youtu.be/R-2RLrHt4YY​)
    2. Kale leaves / Iceberg
    3. Salt to taste
    4. Grilled Zucchini strips
    5. Cheese slice
    6. Cherry Tomatoes
    7. Oil for roasting

 

Directions –

  1. Take Sugar Watchers Gluten Free Low GI Atta, add lukewarm water and salt as required and knead into a dough.
  2. Roll the dough into flat round wraps and cook on a pan on both side.
  3. Take 2 tbsp olive oil and add 1 tbsp chilli flakes, ½ tbsp oregano and 1 tbsp basil leaves. Mix and keep aside
  4. Put the zucchini strips on a pan and spread the basil mix on the strips.
  5. Let the strips grill and them take them off the pan.
  6. Now take your wraps and spread hummus evenly on the full wrap.
  7. Add kale/iceberg leaves
  8. Spread your cheese slice over the kale
  9. Add the Zucchini slices and sliced cherry tomatoes
  10. Fold the wrap and heat it on a pan on all sides till golden brown
  11. Enjoy hot.
