Mexican Poha

Ingredients:

  1. 1 cup - Sugar Watchers Low GI Poha(soaked)
  2. ½ boiled sweet corn
  3. 1 capsicum chopped
  4. 3 tomatoes chopped
  5. nachos as required
  6. Sev as required (could replace with crushed quinoa crackers for a healthier alternative)
  7. Salt to taste
  8. 1 spoon - Oregano
  9. 1 spoon - Chilly flakes
  10. 1 spoon - Oil
  11. Coriander for garnishing 

Instructions:

  1. In a pan heat oil. Saute capsicum and tomato. Add sweet corn. Cook for 1 min. 
  2. Now add Sugar Watchers poha and mix well. 
  3. Add salt, oregano and chilly flakes. Cook for 1 min.
  4. Garnish with sev and crushed nachos and coriander. 
  5. Your super tasty mexican poha ready in just few mins.
